What is the “Mother”?
While the vinegar is being made, the mother of vinegar is also developing. This is a collection of vinegar bacteria and cellulose which group together to form a skin on top of the vinegar container, or cobweb like strands in the liquid itself. Quite apart from being completely harmless, the presence of the mother denotes that the vinegar is still fermenting, almost ‘alive’, and is definitely not pasteurised, or filtered and contains no preservatives or additives.
